Sinn-O-Bun Cinnamon Rolls

Ingredients

Dough:

2 shots of Sinn-O-Bun espresso (or approx. 1/2 cup of strong coffee)

Milk of your choice

3 tablespoons of vegan butter

1 packet of instant yeast

1 tablespoon of sugar

1 teaspoon of vanilla

Pinch of salt

3 cups of flour

Olive oil to grease bowl 

Filling:

5 tablespoons of vegan butter

⅓ cup of brown sugar

2 tablespoons of cinnamon

Icing:

¼ cup of vegan butter

4 oz of vegan cream cheese

2 cups powdered sugar

 

Directions

1. Take 2 shots of Sinn-O-Bun espresso & milk of choice to create 1 cup mixture. Pour into large bowl. 

2. Add 3 tablespoons of vegan butter & warm it with the liquid so that the butter melts. Ensure it’s just warm, not hot - if it’s too hot the yeast won’t activate. 

3. Add 1 packet of instant yeast, 1 tablespoon of sugar, and a pinch of salt to the mixture and let it sit for 10 minutes. The yeast should look foamy - that’s how you know it’s been activated. 

4. Add 3 cups of flour, ½ cup at a time, and stir. Once it is too thick to stir, knead it (either in the bowl or on a lightly floured counter) until it forms a ball.

5. Take the dough out, oil the bowl, and put the dough back in. Let the dough sit in a warm place for an hour or until it doubles in size. 

6. In a separate bowl, mix together the filling: 5 tablespoons of vegan butter, ⅓ cup of brown sugar, and 2 tablespoons of cinnamon. 

. Roll out the dough until it’s about ¼ inch thick on a lightly floured surface. 

8. Spread the filling evenly across the dough.

9. Roll the dough tightly. 

10. Cut it roughly into 10 equal buns. 

11. Preheat the oven to 350. Place the buns in a greased baking pan and bake in the oven for 25-30 minutes or until golden brown on top. 

12. In another bowl, mix together ¼ cup of vegan butter, 4 oz of vegan cream cheese, and 2 cups powdered sugar until smooth. 

13. Spread the icing on top of baked buns and enjoy!
